Honey-Glazed Pecan French Toast with Bacon

Ingredients (serves 4):
- 8 slices of thick Texas Toast bread (you can also have your local bakery cut thick-sliced bread for you)
- 6 large eggs
- 2 cups milk (soy works just as well as regular milk)
- 4 tbsp cinnamon
- 4 tbsp honey
- 4 tbsp brown sugar
- 1/2 cup chopped pecans
- powdered sugar
Directions:
- Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
- Slice each piece of Texas Toast diagonally and set aside.
- Mix eggs and cinnamon in a medium bowl. Add milk and mix well.
- Dip each slice of bread in egg mixture, coating both sides. Put bread on parchment paper-lined baking sheet.
- Drizzle honey over bread. Sprinkle with brown sugar and pecans.
- Bake french toast in the oven for 20 minutes.
- Remove and plate with 4 triangular slices per plate. Sprinkle with powdered sugar and serve with warm syrup.
Alternatives:
- For lactose intolerant eaters, use soy milk instead of regular milk. Vanilla-flavored soy is a good choice.
- For Vegans, use an egg replacer instead of real eggs or mash 2 bananas and mix with soy milk and cinnamon to dip bread in.
- For diabetics, replace brown sugar with Splenda brown sugar and leave the powdered sugar off. Serve with sugar-free syrup.
